Dipain Frire

Batter for Dipain Frire, Gateux Pomme De Terre, Gateux Bringelle (fried bread, potatoes, egg plant)


Today we are sharing a recipe for the batter to make these highly popular battered potatos, bread and egg plant slices a very popular street food in Mauritius and for when guests come round! Enjoy! x


Ingredients:

3 cups Gram flour

1 1/2 cups of plain flour

1 onion sliced thinly

half tbsp crushed/grated ginger

half tbsp grated/crushed garlic

1 tbsp cumin powder

1 tbsp cumin seeds

salt to taste

a pinch of yellow food colouring

a handful of chopped corriander

water


 

Method:

Add the plain flour and gram flour to a large bowl, now add all the other ingredients and mix well..now for the water we need to add this gradually to form a batter that isn't too thick but thick enough to stick to the items you will dip in there so do this part slowly! (if you end up adding too much water simply add more gram flour a little at a time)


Now your batter is ready to dip sliced potatoes, bread,egg plant or whatever you fancy! Deep fry a few at a time until golden brown...done! serve with a nice chutney or condiment of your choice! Enjoy! x


This batter keeps for up to 5 days stored in the fridge.
